ORLANDO, Fla. — A brand new dining destination is showing off its feminine side, starting with its ceviche.
“Ceviche is very, very, very light, especially because Helena is made for ladies,” says operator Victor Perez. Helena Modern Riviera is located at ICON Park in Orlando.
Perez says a reason for the softer, flirty vibes is that he and his partners seem to have more men in the family.
“We all have boys,” he laughed. “We don’t have girls. So 'Helena' is our girl, our lady.”
His light and fresh ceviche is even served in a cute fish-shaped bowl. The fish is sporting a huge pucker, enhanced with flakes and seasonings.
Recipe: Helena's Ceviche
Ingredients
- 4 oranges, juiced
- 6 lemons, juiced
- 1 teaspoon orange zest
- 1/3 teaspoon, lime zest
- 1 pound cut shrimp
- 1 pound fish
- 1/2 pound scallops
- 1 medium red onion, cut julienne style
- 1 bunch cilantro, chopped
- 1 medium green pepper
- 1 medium red pepper
- Salt and pepper to taste
Instructions
- Mix ingredients in a bowl for no less than a half-hour.
- Important: Pre-cook the shrimp and scallops in boiling water for 1 minute, then shock in the bath.
- Store in a non-reactive container. Label and date.
