How many ingredients are in this pie? Only two!
It’s Cool Whip and your favorite yogurt! It’s called the “It’s So Yummy Pie.”
But in order to keep the fluff of the Cool Whip, “baker and sweets maker” Terry White of Son’ni Boi and Petal says you actually have to fold in the yogurt.
“We’re just going to pretend we are making circles,” says White, as she repeats a mantra. “Peace, kindness, joy.”
Once incorporated, White puts the mixture in a graham cracker pie crust. She spreads the two-ingredient filling, recounting her unlikely origins for her baking career.
“I was a child protective services investigator for the state of Florida,” she said.
Being on call for emergency situations was tough.
“In order to just cope, I just started making cookies,” she said.
All of this, for herself and the children she cared for.
“This translated into something wonderful for me,” White said.
That wonderful something was opening a sweets business and winning a coveted spot on the new St. Pete Pier. The marketplace opened in 2020 as part of the $92 million St. Pete Pier district.
“I love being on the pier because I get to meet people from all walks of life,” said White.
“It’s just a Mecca of diversity," she went on to say.
This is also getting White closer to her lifelong dream: Cutting the ribbon on her own sweet shop.
But first, she’s preparing pie toppings. White chooses berries and dragon fruit to go with her mango yogurt!
How to make the "It’s So Yummy Pie"
For people at home, White says it’s a tub of Cool Whip and 6 ounces of your favorite yogurt, folded with peace, kindness and joy (We tested this recipe with two extra ounces and it still turned out wonderful).
Put that in a graham cracker pie crust and then put it in the ice box for at least two hours so it sets beautifully.
One you remove, decorate with your favorite cut fruit!
