PLANT CITY, Fla. — Tampa Test Kitchen returns to the Chef’s Kitchen, along with Executive Chef Dylan Lovely.

The food truck owner and caterer offers a recipe for smoked brisket tacos with roasted street corn salsa and chipotle ranch.

Brisket

  • Season evenly: Equal parts salt, pepper, garlic, paprika
  • Smoke low & slow: 225 degrees for 10 hours

Roasted Corn Salsa

  • 2 cups roasted corn
  • 1/2 cup crumbled fresco cheese
  • 2 diced jalapeños
  • 1/2 cup chopped cilantro
  • 1/2 red onion, diced
  • 1/2 tomato, diced
  • 1/4 cup mayo
  • Salt and pepper to taste

Chipotle Ranch

  • 1/2 cup buttermilk
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1 chipotle pepper, diced
  • Juice of a lime
  • Salt and pepper to taste
