The food truck owner and caterer offers a recipe for smoked brisket tacos with roasted street corn salsa and chipotle ranch.
Brisket
- Season evenly: Equal parts salt, pepper, garlic, paprika
- Smoke low & slow: 225 degrees for 10 hours
Roasted Corn Salsa
- 2 cups roasted corn
- 1/2 cup crumbled fresco cheese
- 2 diced jalapeños
- 1/2 cup chopped cilantro
- 1/2 red onion, diced
- 1/2 tomato, diced
- 1/4 cup mayo
- Salt and pepper to taste
Chipotle Ranch
- 1/2 cup buttermilk
- 1/4 cup mayo
- 1/4 cup sour cream
- 1 chipotle pepper, diced
- Juice of a lime
- Salt and pepper to taste
