The Hawaii Department of Health Maui Food Safety Branch has issued a green "pass" placard to Ramen Bones on Maui, after conducting a follow-up inspection on Thursday. The eatery was originally closed on March 17 when a cockroach infestation was discovered.
The restaurant is operated by Ramen Bones, Inc. and is located at the Hookele Shopping Center at 44 Hookele Street in Kahului.
The restaurant was issued a yellow “conditional” placard after a routine inspection on March 13 revealed the presence of some cockroaches. Maui Food Safety Branch personnel instructed the restaurant to address the situation with a professional pest control treatment plan prior to a follow-up inspection on March 17.
On the 17th, safety branch personnel found a larger number of cockroaches and “roaches that were dropping egg cases within the walk-in refrigerator door seals.” No pest control service had been done. A red “closed” placard was posted and the restaurant shut down after determining there was an active, breeding roach population.
The DOH said they issued a green placard Thursday after finding that Ramen Bones had eliminated all cockroach activity and removed all grease and food debris from kitchen surfaces.
The restaurant worked with a professional pest control company to have multiple treatments conducted. Ramen Bones also implemented a pest monitoring program to help prevent future infestations from occurring, according to the DOH.
The DOH is requiring the establishment to continue:
- Working with its pest control company to have weekly pest control treatments for a month, then move to biweekly and provide completed work orders to DOH; and,
- Having the identified person in charge continue to demonstrate managerial control over procedures implemented for pest control and prevention.
