Chef Gerry Malynowsky with Big Storm Brewing Co. in Clearwater makes Stout Sliders with IPA onions in the Chef’s Kitchen.


  • 2 tablespoons — Oats In Hose Oatmeal Stout
  • 1/2 cup — Arcus IPA
  • 1 1/2 lbs. minced beef (grass-feed beef preferred)
  • 1/2 teaspoon Tabasco sauce
  • 1/4 teaspoon Worcestershire sauce
  • 4 slices of cheese
  • 1 onion
  • 1/2 stick of butter
  • 1 tablespoon brown sugar
  • salt and pepper
  • 4 brioche buns


  • Combine beef, Oats In Hose, Tabasco and Worcestershire sauce, then separate into 4 patties
  • Fold each slice of cheese into each burger ensuring that cheese is inside patty
  • Cook patties to desired temperature
  • Slice onion and sauté in 1/2 stick of butter
  • Add dash of salt and pepper
  • Add brown sugar and continue to sauté until onions turn brown
  • Add Arcus IPA beer and deglaze onions (3 to 4 minutes)
  • Place caramelized onions on top of the burger
  • Dress burgers with the greens (like baby kale, arugula or watercress) of your choice
  • Serve on brioche buns and enjoy
