MAITLAND, Fla. — This week’s Chef’s Kitchen visits Peach Valley Café, which has a festive holiday pancake that could become part of your Christmas traditions.
It smooshes together two comforting treats into one dish: pancakes and Christmas cookies.
The Pancake Man at Peach Valley Café is Maurice Booker.
“I’m the oldest grandson,” he said. “I’ve been cooking all my life.”
Since he was 6-years-old, his grandmother has had him the kitchen — including on holidays.
“Every Christmas morning, we would make pancakes and hot chocolate,” Booker said.
This season, he is making Christmas cookie pancakes. He doesn’t fuss much with the pancake mix, mostly just adds vanilla extract. And he keeps the batter a little lumpy.
“If it’s too smooth, it doubles as more of a cake than a pancake,” Booker said.
Another key factor is the batter should be cool, to help it rise.
“A pancake you don’t work for is not a pancake,” Booker said.
When it starts to bubble, you know you’ve got a pancake, he said.
And when it starts to look golden brown, flip it flat-side up.
“We’re going to take a little powdered sugar, or, what we like to call, ‘Florida snow,'" Booker said, laughing.
Then he creates a Christmas tree design on top, using green icing.
“And of course, Christmas isn’t Christmas without chocolate. So, chocolate sprinkles,” Booker said.
Then add chocolate chips and a little butter to top it off.
