ST. PETERSBURG, Fla. — It’s time for Ahi Tuna & Guacamole Canapés!

This recipe comes courtesy of Toasted Associates of St. Pete, an event and full-service catering company.

Marinade:

  • 1/2 C Soy sauce
  • 2 TBSP Sesame oil
  • 1 Lime, juiced
  • 2 TBSP Agave
  • 2 TBSP Water
  • 1 TBSP Ginger, diced
  • 1 TBSP Garlic, diced
  • 2 TBSP Jalapeño, diced
  • 1 TBSP Cilantro, chopped
  • 1 TBSP Green onion
  • 1 TSP Sesame seeds
  • Salt and pepper to taste
  • 2 C Ahi Tuna, diced
  • Shredded fermented ginger carrots to garnish 

Guacamole:

  • 1 Avocado
  • 2 TBSP Jalapeño
  • 2 TBSP cucumber
  • 1 TBSP cilantro
  • 2 TBSP green onion
  • 1 TSP lime juice or to taste
  • Salt and pepper to taste 

Directions: 

  • Combine marinade, add by tablespoon to tuna.
  • Separate out any extra liquid.
  • To make guacamole, combine ingredients.
  • To make mold, sprinkle sesame seeds in bottom of ramekin.
  • Fill 2/3 with tuna, and top with guacamole.
  • Flip over into serving tray.
  • Surround with fried wonton chips.

Fried wontons:

Cut wontons in half and fry for 30-60 seconds each side until light golden brown and crispy.
