ST. PETERSBURG, Fla. — It’s time for Ahi Tuna & Guacamole Canapés!
This recipe comes courtesy of Toasted Associates of St. Pete, an event and full-service catering company.

Marinade:
- 1/2 C Soy sauce
- 2 TBSP Sesame oil
- 1 Lime, juiced
- 2 TBSP Agave
- 2 TBSP Water
- 1 TBSP Ginger, diced
- 1 TBSP Garlic, diced
- 2 TBSP Jalapeño, diced
- 1 TBSP Cilantro, chopped
- 1 TBSP Green onion
- 1 TSP Sesame seeds
- Salt and pepper to taste
- 2 C Ahi Tuna, diced
- Shredded fermented ginger carrots to garnish
Guacamole:
- 1 Avocado
- 2 TBSP Jalapeño
- 2 TBSP cucumber
- 1 TBSP cilantro
- 2 TBSP green onion
- 1 TSP lime juice or to taste
- Salt and pepper to taste
Directions:
- Combine marinade, add by tablespoon to tuna.
- Separate out any extra liquid.
- To make guacamole, combine ingredients.
- To make mold, sprinkle sesame seeds in bottom of ramekin.
- Fill 2/3 with tuna, and top with guacamole.
- Flip over into serving tray.
- Surround with fried wonton chips.
Fried wontons:
Cut wontons in half and fry for 30-60 seconds each side until light golden brown and crispy.
